Slow and steady wins the quince race
A lot of people never heard of quince fruit. I suppose it's a bit of an old fashioned fruit, not fitting in with our fast paced modern lives. Quinces require patience and lots of spare time. In fact, it takes us many hours to turn this hard, pale yellow fruit into a beautiful pink and fragrant fruit paste.
Quinces have a very long, slow growing season and a lot can go wrong. We often source hail damaged fruit to save it from going to waste.
