Sourcing bitter Seville oranges in Queensland is not easy, but we’re lucky enough to have established a direct supply from two hobby growers with bearing backyard trees. The trees crop too much for the owners, so we are always invited to take the surplus. During the winter months when the oranges are ripe, we personally go and hand pick the fruit.
Back in the kitchen, we then infuse Australian arabica coffee – grown in the Noosa Hinterland – into our marmalade to create this modern breakfast delight.
